Rice

I love rice - luckily! When I was little I was very anaemic and didn't like meat. My mum only had to mix meat with rice for me to eat it! I use the following types of rice.
  • white basmati - I always buy the Tilda brand. It's fast-cooking, doesn't stick and tastes great. I use a small mugful (large cup) for two of us. I always soak it in cold water first - just for 10 minutes or so (while I'm starting to cook the rest of the food). I strain it and rinse it a couple of times and then put it on to boil. It only takes a few minutes. I sometimes add butter or peas.
  • brown basmati - my favourite rice. It takes longer to cook but has much more flavour and is slower burning (you feel full for longer). I don't soak it - just rinse it and boil it.
  • arborio - for risottos and paella.
  • short-grain brown - when I'm trying to lose weight or detox I eat this with lots of vegetables. It has a nutty taste and great texture.
All these types of rice are available at my local health food shop - Helen's Wholefoods,61 St. Mary Street, Weymouth, Dorset DT4 8PP. Tel.  01305 777261 or order online for UK delivery at Goodness Direct.
